Even if you’re not the baking type, these shouldn’t prove too taxing. We’ve discovered pretty much the easiest way for you to make a showstopping poker-themed sweet treat that will satisfy your sugar cravings and impress your friends.

What are poker chip cookies?

They are sweet, crumbly, chocolatey, perfectly baked disks of pure joy. Easy to make, easy to eat. Need we say any more than that? And these also happen to be vegan, as long as you use vegan chocolate. We aren’t vegan, but we swear this is the best cookie recipe we’ve ever made. And we’ve made a few.

This recipe makes a crap load of cookies. Approximately three dozen. Make the whole thing, then bake half and freeze half. Alternatively, bake the lot and give some to your pals.

Ingredients

Before you start mixing it up, make sure you have all of this stuff:

  • 400g plain flour
  • 1 tsp baking powder
  • 1 tsp bicarbonate of soda
  • 1 tsp sea salt
  • 250g sugar (any kind will do)
  • 200g chocolate chips (we like dark, but it’s up to  you)
  • 170 ml coconut oil (sunflower oil or butter work here too)
  • 1 tbsp vanilla extract

For the topping:

  • 200g white chocolate
  • Icing pens

Method

Melt the coconut oil in a small pan and then set aside.

Next up, mix all the dry cookie ingredients together.

When that’s done, add the vanilla extract and eight tablespoons of water into the coconut oil and whisk (a fork will do in a pinch) until it looks a little milky.

Then add this mix to the dry ingredients and stir until it clumps together.

After that, simply put the bowl in the fridge for an hour.

When that 60 minutes is up, heat your oven to 390f/190c/gas 6.

Get a few baking trays and line them with parchment paper.

With a little spoon, scoop up some of the mixture and roll them into balls. Put each ball onto the baking tray and flatten them slightly. When you’ve got a couple trays full up of cookies, put them in the oven for 10-14 minutes.

Check them — if they’re slightly golden around the edges, you’ve got yourself a cooked batch of cookies.

Then leave them in the tray to cool down before you decorate.

When they’re cool, melt the white chocolate. Then spoon a bit of white chocolate on each cookie and level off with a knife so you get a nice smooth edge.

Wait for the white chocolate to set. Then get creative with those icing pens. Draw dollar amounts on your chips and don’t forget the little colourful design edges chips are famous for!
